Throughout this series, we are partnering with food producers and chefs from a variety of backgrounds and influences to showcase their unique culinary and beverage achievements. For our third annual Supper Series, we are highlighting local and regional foodways and food producers, the people on the ground who bring food to the table. May kicks us off with Ty Walker, owner of Smoke In Chimneys, a trout hatchery and farm near New Castle, Virginia. Since 2022, Ty and his wife, Shannon, have been learning to operate the 1930s antique hatchery while dedicating themselves to raising delicious Virginia trout.
